This spicy seafood salad calls for a lot of ingredients but is worth the effort. The whole-wheat macaroni pasta is toothsome and you don’t miss the fat in the mayo with all the other flavours blending into a tartar sauce – like dressing. Ingredients:
1 cup uncooked whole-wheat macaroni |
3 tbsp finely diced red onion |
1 tbsp chopped cubanelle pepper |
1/2 cup diced celery |
3/4 cup fat-free mayonnaise |
1/4 cup sweet pickle relish |
3 tbsp ketchup |
2 tbsp spicy or dill pickle juice |
1 tbsp prepared horseradish |
1/4 tsp hot sauce |
1/2 tsp chili powder |
1/2 tbsp garlic powder |
2 oz cooked salad shrimp |
Directions:
1. Bring a large pot of salted water to a boil, add the macaroni and let it cook until al dente (6 minutes max). Drain well. 2. In a medium-size mixing bowl, combine onion, pepper, celery, mayonnaise, relish, ketchup, pickle juice, horseradish, hot sauce, chili powder, salt, garlic powder and shrimp. 3. Fold the macaroni into the mixture. 4. Cover and chill at least 3 hours before serving. |
