Ingredients:
1 pound unpeeled medium-size fresh shrimp |
olive oil-flavored vegetable cooking spray |
1 cup chopped onion |
1 cup chopped green pepper |
1/2 teaspoon dried crushed red pepper |
6 cloves garlic, minced |
2 (14 1/2-ounce) cans cajun-style stewed tomatoes, undrained |
5 cups cooked long-grain rice (cooked without salt or fat) |
Directions:
1. Peel and devein shrimp; set aside. 2. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and next 3 ingredients; saute until tender. Add tomato. Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes, stirring occasionally. Add shrimp. Cover and cook 5 minutes or until shrimp turn pink. Serve over rice. |
