Ingredients:
olive oil-flavored cooking spray |
1 cup chopped onion (about 1 medium) |
1 cup chopped green bell pepper (about 1 medium) |
1/2 teaspoon crushed red pepper |
6 garlic cloves, minced |
2 (14 1/2-ounce) cans cajun-style stewed tomatoes, undrained |
3/4 pound peeled and deveined medium shrimp |
2 1/2 cups cooked long-grain rice |
Directions:
1. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and next 3 ingredients; sauté until tender. Add tomatoes. Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes, stirring occasionally. Add shrimp. Cover and cook 5 minutes or until shrimp are done. 2. To serve, spoon shrimp mixture over rice. |
