Ingredients:
1 baguette, cut into 24 diagonal slices |
2 tablespoons olive oil |
1/3 cup reduced-fat mayonnaise |
4 scallions, thinly sliced |
1/4 cup chopped gherkins |
1 tablespoon chopped capers |
1 tablespoon tomato paste |
1 tablespoon lemon juice |
1/2 teaspoon paprika |
1/4 teaspoon cayenne pepper |
8 ounces cooked shrimp, roughly chopped |
1 tablespoon chopped chives |
Directions:
1. Preheat oven to 375ºF. Brush baguette slices on both sides with olive oil and place on a rimmed baking sheet. Bake for 10 minutes, turning over halfway through. Let cool. 2. In a large bowl, combine mayonnaise, scallions, gherkins, capers, tomato paste, lemon juice, paprika, cayenne and shrimp; stir well. Mound mixture onto baguette slices; sprinkle with chives. |
