Spicy Shrimp And Pasta Casserole |

This dish is bound to become a favorite. Ingredients:
butter |
2 eggs |
1 1/2 cups half and half |
1 cup plain yogurt |
1/2 cup swiss cheese |
1/3 cup feta cheese |
1/3 cup fresh parsley leaves |
1 teaspoon dried basil-crushed |
1 teaspoon dried oregano-crushed |
9 oz angel hair pasta cooked |
16oz mild,medium,or hot salsa-thick and chunky |
2 pounds shrimp-cleaned,peeled,deveined |
1/2 cup grated monterey jack cheese |
Directions:
1. Preheat oven to 350 degrees. 2. Grease a 12 x 8 glass dish with butter. 3. Combine eggs,half & half,yogurt,swiss cheese,feta cheese,parsley,basil,and oregano in large bowl. Mix until thoroughly blended. 4. Spread 1/2 of cooked pasta over bottom of prepared pan. 5. Cover the pasta with salsa. 6. Add 1/2 of the shrimp and then cover it with Monterey Jack. 7. Add the remaining pasta and shrimp. 8. Spread egg mixture over top of the casserole. 9. Bake 30 minutes or until bubbly. 10. Let stand for 10 minutes before serving. 11. Note: Occasionally to save time,I use a large jar of roasted garlic alfredo sauce in place of the egg mixture. I also add a layer of diced andouille sausage for extra flavor. |
