Spicy Sesame Noodles With Peanut Sauce |

Love it! Ingredients:
8 oz. spaghetti |
2/3 c. chunky style peanut butter |
2 t. grated peeled fresh ginger |
2 small garlic cloves |
1/2 t. salt |
1/4 t. crushed red pepper flakes |
2 t. toasted sesame oil |
2 scallions, thinly sliced |
2 t. sesame seeds |
Directions:
1. Cook spaghetti according to directions. 2. Drain, reserving 1/4 c. cooking liquid. 3. Rinse spaghetti with cold water until cooled. 4. Drain well. 5. In a blender, add reserved cooking liquid, peanut butter, sesame 6. oil, ginger, garlic, salt, and crushed red pepper flakes. 7. Blend on med-high until well mixed. 8. In bowl, toss spaghetti with peanut sauce and scallions. 9. Cover and refrigerate until chilled (about 1 hour). 10. Heat dry skillet over low heat. 11. Add sesame seeds and cook stirring constantly until lightly browned (about 2 minutes). 12. Sprinkle over spaghetti just before serving. |
