Spicy Sesame Noodle Salad

Serve chilled as a side dish, or warm with cooked chicken or shrimp for a main dish
Ingredients:
4 oz uncooked linguini
1/4 cup lime juice
3 tablespoons canola oil
3 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon asian sesame oil
1 tablespoon minced garlic
1 tablespoon grated orange zest
2 small serrano chile peppers, chopped
2 cups matchbook cut carrots
1 cup sliced green onions
salt and pepper to taste
Directions:
1. Cook pasta according to package
2. Drain and rinse with cold water until pasta is cooled
3. In a large salad bowl, combine lime juice, canola oil, soy sauce, brown sugar, sesame oil, garlic, orange zest, and serrano peppers, stirring until the sugar is dissolved
4. Allow the dressing to stand 30 minutes
5. Lightly toss in the carrots, green onion and linguini and season with salt and pepper to taste
6. Cover and chill or serve warm
