This recipe makes a nice sized (7 to 8 inches I suppose) sausage like loaf and can probably be easily changed to your taste based on what spices you use. Note: if you want it to be more like the former recipe (like lunch meat) cook it longer (30-45 mins steaming, 45 mins baking), if you're looking for a nice ground beef substitute 30-35 mins steaming, then another 30-35 mins baking is better. I've used the longer cooked seitan in stuffing and the lesser cooked in dirty rice. Both were thoroughly enjoyed by all involved! I hope you enjoy it too! Ingredients:
1 1/2 cups vital wheat gluten |
1/4 cup nutritional yeast flakes |
2 teaspoons garlic powder |
2 teaspoons paprika |
2 teaspoons black pepper |
1 teaspoon salt |
1/4 teaspoon cayenne pepper |
1/4 teaspoon cumin |
1 cup water |
4 tablespoons tomato paste |
4 tablespoons canola oil or 4 tablespoons vegetable oil |
1 tablespoon soy sauce |
1/4 teaspoon liquid smoke (optional, use more to taste) |
Directions:
1. Sift together all dry ingredients in a large bowl. 2. In a separate bowl, mix wet ingredients. 3. Add the liquid mixture to the dry ingredients. 4. Knead until well mixed and shape into an 8 inch (or so) loaf. 5. Lay out a fairly large sheet of aluminum foil, place the loaf in the center, and wrap foil around loaf lengthwise, twisting the ends to form a sausage link-like loaf. 6. Steam loaf (still wrapped in foil) for 30-45 mins (see note in description). 7. Pre-heat oven to 350°F. 8. Place loaf (still wrapped foil) on a baking sheet or in a pan and bake for 30-45 mins (see note in description). 9. Remove, unwrap, let cool, and enjoy! |
