A tasty and easy one pot meal. Ingredients:
1 onion, chopped |
1 red pepper, diced |
1 tablespoon olive oil |
9 ounces basmati rice |
1 3/4 cups chicken broth |
6 cooked sausages, sliced |
7 ounces fresh salsa |
Directions:
1. Saute the onion and pepper in the oil until tender. Stir in the rice and broth, cover and simmer for 20mins until the rice is tender. 2. Stir in the sausages and salsa and simmer uncovered over a medium heat for a further 5mins or until hot. Serve in bowls. |
