These are a spicy sausage muffin. Combining the wet & dry ingredients is a bit more difficult than most muffin recipes. Ingredients:
8 ounces hot italian sausage, uncased |
2 cups all purpose flour |
1/3 cup grated parmesan cheese |
1 tablespoon baking powder |
1/2 teaspoon salt |
1/4 teaspoon black pepper (or less crushed red pepper flakes) |
1/2 teaspoon dried oregano |
1 large egg |
14 ounces pizza sauce or tomato sauce |
2 tablespoons olive oil (approximately) |
Directions:
1. Preheat oven to 400 degrees F. 2. Brown sausage meat in skillet, breaking up as you go. 3. Remove to paper toweling, reserving the drippings. 4. Beat the egg with fork or wire whisk. 5. Blens the sauce into the egg. 6. Add 3 tablespoons of the sausage drippings, adding olive oil if necessary. 7. Add sausage meat and mix well. 8. In another bowl mix the flour, Parmesan cheese, baking powder, salt, pepper and oregano. 9. Combine the wet and dry ingredients until just moistened. 10. Bake at 400 degrees F for 20 to 25 minutes. |
