Ingredients:
6 eggs |
1 1/2 cup(s) all-purpose flour |
1 teaspoon(s) baking powder |
1 cup(s) milk |
1 carton(s) small curd cottage cheese (8-12 oz) |
3 ounce(s) cream cheese |
8 tablespoon(s) butter melted |
10 ounce(s) monterey jack cheese |
6 ounce(s) mild cheddar cheese |
1 pound(s) jimmy dean sausage, cook, crumbled and well drained |
1/8 teaspoon(s) salt and pepper |
1 bunch(es) green onions |
4-5 large button mushrooms sliced |

Directions:
1. Saute mushrooms in 2 tablespoons of butter and set aside. 2. In a large bowl, beat eggs well with a whisk. Add flour, baking powder and milk. Cut cream cheese in small cubes and add cottage cheese and cream cheese to mixture. Grate Monterey Jack and cheddar cheese and add to mixture along with the cooked sausage, salt, pepper, chopped green onions and mushrooms. Pour into a well-greased 9x13 pyrex dish. Top with paprika. Bake at 350 degrees for 35 minutes. If you want to make this extra spicy you can use hot sausage or a mixture of hot and regular, and/or chopped jalapenos. This recipe takes a little time to put together but you can make it up the day before. |
