Spicy Salmon Salad With Red Grapes |

A nice combination of argula with grapes. The salmon is marinated in a spicy soy combination and the dressing has has nice blend of balsamic vinger with orange juice. Ingredients:
4 -170-225 grram salmon fillets |
10ml powdered ginger powder |
10ml powdered garlic powder |
5ml cayenne powder |
20ml dark soy sauce |
20ml brown sugar |
90ml canola oil |
2l arugula or mixed baby salad greens |
500ml red seedless grapes, halved |
vinaigrette |
250ml extra virgin olive oil |
35ml balsamic vinegar |
45ml tangerine or orange juice |
2ml dijon mustard |
5ml sugar |
salt |
freshly cracked pepper |
Directions:
1. With a sharp knife, cut each of the salmon portion into 4 strips, for a total of 16 strips. Lay the strips o a plate and pat dry with paper towel 2. Combine all the ingredients for marinade (not the oil) and mix well. Brush the sauce onto the salmon or pour over salmon and place in the fridge ffor a few hours. 3. BBQ the strips on the grill or saute salmon in the canola oil over medium to medium high heat for 3 minutes each sid or until browned. 4. In a large bowl, toss the arugula wit the grapes and set aside. 5. Combine all the ingredients for the vinaigrette in a jar and mix well. 6. To serve, drizzle vinaigrette over arugula and grapes and toss. You won't use it all. Divide salad among four plates and top each with 4 strips of salmon. Drizzle a little more vinaigrette over the salmon. |
