These patties are very easy to prepare after work for a flash appetizer or make them bigger and serve as the main dish with a big green salad and some rice or roasted root vegetables. Ingredients:
2 x 170g cans of salmon |
dash of oil (i use olive) |
1-2 cloves garlic |
1 1/2 cups fresh breadcrumbs |
1 egg |
2 tablespoons of fresh chopped coriander |
2 chopped spring onions |
1 t of worcestershire sauce |
1 de-seeded and chopped red chilli |
2 t lime juice |
salt & black pepper to taste |
Directions:
1. Fry a little olive oil & garlic for 2 minutes 2. Add canned drained salmon & cook 3 minutes 3. Combine all the ingredients in a large bowl 4. If this is for an appetizer break into 15 small balls, place on a plate and put in the fridge for 30 minutes so they bind together. I use my nifty tupperware pattie maker moulds and make 5-6 large patties for dinner. 5. Fry in as little oil as you can in a non-stick pan. |
