So easy to prepare. Healthier than french fries, these are a good accompaniment to many main courses. Ingredients:
1 tablespoon dijon mustard |
1 tablespoon vegetable oil |
1 clove garlic, minced |
1 teaspoon dried tarragon |
1/4 teaspoon paprika |
1/8 teaspoon red pepper flakes |
2 large potatoes, peeled and cut in 1 inch pieces |
salt, to taste (optional) |
Directions:
1. Combine mustard, oil, garlic, tarragon, paprika, and pepper flakes. 2. Wash potato pieces and pat dry with paper towels. 3. Add to spice mixture and toss to coat well. 4. Very lightly grease a baking sheet. 5. Add potatoes in a single layer. 6. Bake in a preheated 350F oven for approximately 35 minutes or until potatoes are tender. 7. Sprinkle with salt, if desired. |
