Very nice potato dish bursting with lots of herby flavors. Great as a side to just about anything. Enjoy Ingredients:
15 red potatoes baked and quartered |
3 tablespoons vegetable oil |
2 garlic cloves finely diced |
3 tablespoon cumin seeds |
2 red chilies |
2 tablespoons lime juice |
2 teaspoons salt |
1 teaspoon sugar |
1/4 cup cilantro leaves |
1/4 cup unsweetened coconut |
Directions:
1. Place potatoes in bowl then set aside. 2. In small frying pan heat oil then add garlic and allow to brown. 3. Toss in cumin seeds and let it sizzle then add chilies and remove from heat. 4. Mix in lime juice, salt and sugar then pour over potatoes and combine well. 5. Bake 30 minutes at 350 then sprinkle cilantro leaves and coconut over potatoes and serve. |
