My friend passed this recipe along to me, and now I'm hooked! I always make this when I have guests come over because not only does it make a large number of servings, but I can make it ahead of time and store it in the fridge. Ingredients:
1/2 cup rice vinegar |
1/2 cup soy sauce |
1/4 cup asian-style sesame oil |
1/4 cup hot chili oil (or to taste) |
1/4 cup freshly squeezed lime juice |
2 cups long-grain white rice |
6 green onions, sliced |
2 carrots, peeled and diced |
1 red pepper, diced |
1 small jalapeno, minced |
1/2 cup chopped fresh mint |
1/4 cup chopped fresh cilantro |
1 pound medium-sized cooked shrimp |
Directions:
1. Cook the rice. 2. Fluff the cooked rice with a fork, transfer to a large bowl and cool slightly. 3. Combine the first five ingredients to make the dressing. Whisk to blend well. 4. Gently toss the warm rice with about 1/3 of the dressing. Fluff frequently until the rice is cool. 5. Add all ingredients and toss with the remaining dressing. |
