This is a low fat dish that my sister and I enjoy very much (especially when dieting) 1 1/2 cups equals WW points. It can be served as an entree or side dish. Ingredients:
1/2 cup chopped onion |
1 tbs olive or vegetable oil |
2 cups low fat chicken broth |
1/4 cup dry lentils, rinsed |
1 can (16 oz.) red kidney beans, rinsed |
and drained |
1 cup salsa (hot or mild) |
1 cup uncooked long grain rice (uncle |
ben's) |
1 cup frozen corn |
1 jar (2 oz.) diced pimientos, drained |
(optional) |
1 tsp chili powder |
Directions:
1. In a saucepan over medium heat, saute onion in oil until tender. Add broth, and lentils; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in remaining ingredients; bring to a boil. Reduce heat, cover and simmer 20-25 minutes longer or until lentils and rice are tender. 2. Number Of Servings:12 sides / 4 entree |
