Barely a recipe, but great as a side for fajitas or quesadillas or, my personal fave, a filling for burritos. Easy Mexican-style spicy rice, done in the rice cooker. You could use any long-grain white or brown rice in place of the basmati (brown will take considerably longer). Read more . If you have stock around you can cook the rice in that instead of water, but be sure to adjust the salt. Ingredients:
1/2 cup basmati rice |
1/2 cup water |
1/2 cup hot salsa |
pinch of salt |
knob of butter or glug of olive oil |
2 tsp chili powder |
3-5 dashes tabasco sauce |
Directions:
1. Put everything in the rice cooker. 2. Stir with a fork to blend. 3. Put the lid on. 4. Press the cook button and wait. 5. That's it! |
