From Simply Vegan. Serve hot with rice. Ingredients:
1 tablespoon oil |
1 cup red lentil |
1 onion, finely chopped |
1 teaspoon cumin |
1/4 teaspoon cayenne |
2 1/2 cups water |
Directions:
1. Stir fry lentils, onions and spices in a non-stick frying pan for 2 minutes. 2. Add water and cook over medium heat for 15 minutes, covered, stirring occasionally. |
