Spicy Red Lentils

Ingredients:
1 tablespoon oil
1 cup red lentil
1 onion, finely chopped
1 teaspoon cumin
1/4 teaspoon cayenne
2 1/2 cups water
Directions:
1. Stir fry lentils, onions and spices in a non-stick frying pan for 2 minutes.
2. Add water and cook over medium heat for 15 minutes, covered, stirring occasionally.
