A lovely pink soup that is good for you. Ingredients:
2 teaspoons olive oil |
2 onions, chopped |
3 garlic cloves, minced |
2 teaspoons cumin |
1 teaspoon paprika |
1 teaspoon cayenne |
2 tablespoons flour |
7 cups chicken broth |
1 1/2 cups red lentils |
2 tablespoons tomato paste |
1 bay leaf |
12 ounces evaporated milk |
Directions:
1. Heat oil on medium heat. 2. Saute onion and garlic. 3. Add spices. 4. Saute one minute. 5. Add flour and mix. 6. Add broth, lentils, tomato paste and bay leaf. 7. Bring to boil, stirring often. 8. Cover and reduce heat. 9. Simmer for 25 to 30 minutes. 10. Remove bay leaf. 11. Puree. 12. Stir in evaporated milk. 13. Reheat. |
