This was a sort of whoops one night that turned out delightfully tasty. Little bit of a kick but it could be toned down if you'd like. Cook time includes prep. (The recipe is written as I made it so it is spicy...just a warning!) Ingredients:
1/2-1 lb hamburger |
15 ounces red beans |
6 ounces medium salsa |
6 garlic cloves |
1/2 cup chopped onion |
4 teaspoons cayenne pepper |
2 tablespoons olive oil |
1 cup rice (cooked) |
Directions:
1. Sautee onion and garlic lightly in olive oil 2. While sautéing begin cooking rice and browning burger. 3. Add beans (undrained) and cayenne to onion and garlic, allow to cook 5-7 minutes or until lightly thickened. 4. Add salsa and hamburger to mixture and allow to cook another 5-7 minutes to mix flavors and thicken a little more. 5. Once thickened to your liking pour over rice and enjoy! 6. *You could add some tomato paste if you wanted a little more sauce*. |
