Designed as a main course for vegetarians, but could easily be a side dish as well. Also, if you have to have your meat, you could add chicken or sausage. Ingredients:
2 tablespoons vegetable oil |
1 stalk celery, chopped |
1 green pepper, chopped |
1 onion, chopped |
2 garlic cloves, squished |
1/2 teaspoon oregano |
1/2 teaspoon thyme |
1/2 teaspoon cayenne pepper (to taste) |
2 tablespoons tomato paste |
2 cups vegetable broth |
1 (15 1/2 ounce) can red beans |
1/2 teaspoon salt |
1 cup white rice |
Directions:
1. Heat oil in saucepan. Add celery, green pepper, onion, and garlic. Heat until vegetables are beginning to get soft. 2. Add oregano, thyme, and cayenne pepper. Then, add tomato paste and vegetable broth. 3. Add red beans, salt, and rice. Let it come to a boil. 4. Cover and reduce heat to simmer. Let simmer for about 20-25 minutes. |
