This salad goes with everything! I have paired it with grilled fish and chicken but it is just delicious by itself! I have had this recipe written down for years and don't remember where it came from but I use it all the time. Read more . Enjoy! Ingredients:
1/4 cup fresh lime juice |
1 t light soy sauce |
1 tsp sesame oil |
1 t sugar |
1 tsp crushed red pepper flakes |
1/4 tsp salt |
3 mangos, firm but ripe, peeled and julienned (about 1 long pieces) |
1 cup fresh blueberries |
1 larg red bell pepper, thinly julienned |
1/2 cup red onion, finely chopped |
1/2 cup cilantro leaves, chopped |
1/2 cup fresh mint leaves, chopped |
Directions:
1. Combine the first 6 ingredients in a large bowl and whisk until sugar is dissolved. 2. To the bowl, add remaining ingredients but don't toss until about an hour before serving. 3. Keep chilled. 4. The best things in life aren't things.... :) |
