This is an absolute must for my family every holiday. I almost always double it because it gets eatten up so fast. This spicey, savory soup is wonderfully easy but will have people begging for the recipe! Ingredients:
1/4 cup butter |
1 cup onion, chopped |
2 garlic cloves, minced |
1 teaspoon curry powder |
1 teaspoon salt |
1/4 teaspoon coriander powder |
1/8 teaspoon red pepper |
3 cups chicken broth |
16 ounces canned pumpkin |
1 cup half-and-half cream |
Directions:
1. Melt butter. 2. Add onion and garlic, cooking over medium heat until soft. 3. Add seasonings. Cook at Least one minute. 4. Add broth and bring to a low boil for 15-20 minutes. 5. Add pumpkin and half & half. Boil 5 minutes. 6. Enjoy! |
