This recipe goes with Curried Pumpkin Soup with Spicy Pumpkin Seeds Ingredients:
seeds from 2 mini pumpkins (about 3/4 cup) |
1 tablespoon olive oil |
1/2 teaspoon salt |
1/2 teaspoon ground cumin |
1/4 teaspoon ground red pepper |
1/4 teaspoon paprika |
Directions:
1. Remove excess fiber and pulp from seeds, and pat dry with paper towels. Stir together seeds and oil. Combine salt and remaining ingredients; sprinkle mixture over seeds, tossing well. Spread seeds in a single layer on an ungreased baking sheet. Bake at 300° for 35 to 40 minutes, stirring often, until roasted and crisp. |
