Spicy Pumpkin Bars With Cream Cheese Frosting |

I love spicy pumpkin things... I always add extra spice to my pies..these are nice treats to take to Potlucks or dinner group. Ingredients:
2 cups flour |
4 teaspoons baking powder |
1 1/4 teaspoons cinnamon |
1 1/4 teaspoons nutmeg |
1 1/4 teaspoons ginger |
1/2 teaspoon salt |
1/2 cup shortening |
1 cup brown sugar |
1/4 cup sugar |
4 eggs |
1 (16 ounce) can pumpkin puree (2 c mashed) |
1 (8 ounce) package cream cheese, softened |
1 tablespoon margarine or 1 tablespoon butter |
2 1/2 cups powdered sugar |
1 tablespoon milk |
1 teaspoon vanilla |
Directions:
1. Heat oven to 350 degrees. 2. Grease a 15 1/2 x 10 1/2 jelly roll pan. 3. SIft together flour, baking powder, cinnamon, nutmeg, ginger and salt. Set aside. 4. Cream the shortening, brown sugar and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Then beat in pumpkin. 5. Gradually stir in dry ingredients. 6. Spread in greased pan. Bake for 30 minutes. 7. Cool in pan. 8. When bars are cool, eat icing ingredients together and frost. |
