Spicy Pulled Pork in Tart Cherry Sauce |

Am stashing for the next gathering at the beach. Ingredients:
3 lbs pork shoulder, boneless & trimmed of visible fat |
1 onion, halved and sliced |
1/2 cup cherries, dried tart |
1/2 cup ketchup |
1/3 cup cider vinegar |
1/4 cup brown sugar, packed |
2 tablespoons instant espresso powder |
1/2-1 1/2 teaspoon red pepper flakes, crushed (or 1/4 to 3/4 teaspoon cayenne) |
1 teaspoon cinnamon |
1 teaspoon garlic powder |
Directions:
1. Place pork and onion in slow cooker. Place cherries, ketchup, vinegar, brown sugar, espresso powder, pepper flakes, cinnamon and garlic powder in a food processor or blender. Pulse to coarsely chop cherries. 2. Pour sauce over pork. Cover and cook 8 hours on low or 4 hours on high. Uncover cooker and use 2 forks to shred pork. Stir to combine with sauce. Recover and keep warm. Serve on sandwich rolls. |
