Spicy Potatoes With Tomato Salsa |

From Out Here magazine, a delcious spicy potato dish. Serve as a side or even a meal unto itself ! Ingredients:
2 tbs olive oil |
2 tbs lime juice |
1 tsp tobasco sauce |
2 tsp paprika |
2 lbs potatoes cut in quarters |
salsa |
1 lb cherry tomatoers |
2 large green onions chopped |
1 tbs olive oil |
1 tbs lime juice |
fresh parsley, mint or sage leaves chopped |
salt and pepper to taste |
Directions:
1. Preheat oven to 435F 2. Toss potatoes with remiang ingredients ( except the salsa ) 3. Bake in an even layer until cooked and crispy 4. Cook 1 hour, turning potatoes halfway theough cooking time 5. For salsa, combine all 6. Season with salt and pepper to taste 7. Serve along side the potatoesa |
