calling all leftover cooked potatoes! don't throw them away...turn them into something delish! Ingredients:
any potatoes you've got leftover - roasted, baked or boiled...this is a good way to use them up. |
4 tbsp olive oil |
4 tsp chilli powder |
1 1/2 tsp cumin, ground |
2 tsp paprika |
1 tsp salt |
1 black pepper to taste |
200g leftover cooked potatoes |
1 fresh parsley, chopped |
Directions:
1. 1. Preheat oven to 180 degrees c. 2. 2. In a bowl, mix oil, chilli powder, cumin, paprika, salt and 3. pepper. 4. 3. Toss with oil mixture, and place potatoes in a single 5. layer on a baking tray. Drizzle with remaining oil mixture. 6. 4. Bake in preheated oven for 10 minutes. Loosen potatoes with a 7. spatula and turn. Bake about 15 more minutes or until potatoes are 8. brown and crispy. 9. 5. Garnish with chopped parsley. Lovely!! |
