From Justin's recipe, just my tweak on it. Oven baked potatoes with cheese and spice, so easy and sooo addictive. Ingredients:
olive oil or fav |
6 medium russett potatoes or enough to fill cookie pan |
1 tsp salt |
1 tsp ground pepper |
1 tsp fav cajun spice mix or rub |
1 cup grated parmesan or fav dry cheese |
1 tsp oregano |
Directions:
1. Preheat oven to 375-400 f 2. cut potatoes into wedges about 1/4 inch thick 3. place into large bowl and toss with enough oil to coat evenly and well. otherwise they may stick to even a non stick pan, trust me, I've done it. LOL 4. place oiled wedges onto cookie pan with sides (jelly roll pan) 5. Mix rest of ingredients in small bowl then sprinkle on top of wedges 6. bake in oven for about 20-30 mts or until potatoes are soft and bottoms crispy 7. serve hot! although they aren't too bad cold, either. 8. If they seem a bit greasy in the pan when done put on brown paper and let absorb, paper towels may stick. |
