Potato and chourico tapas great as a side dish, too I've had various versions of this before and they were all very good. Ingredients:
about 4 1/2 pound red potatoes, peeled or not, and cut up into bite size pieces |
1 yellow onion finely julienned |
about one pound chourico sausage sliced, diced or cut into small strips |
a couple finely chopped red chiles |
salt |
a good spanish virgin olive oil |
2-3 t smoky spanish paprika |
Directions:
1. In large pot or pan add potatoes, enough water to cover them then onion, chourico chiles and salt if needed or preferred 2. Bring to boil then simmer until potatoes are soft but firm, drain 3. In large skillet heat 3 T olive oil and add paprika, stir for a minute 4. add potato mixture and toss well to coat |
