This is not your regular potato soup. It has a red sauce base and can be made as spicy as you like it. Ingredients:
1 lb. ground beef |
4 cups cubed, peeled potatoes |
1 small onion, chopped |
1 - 26 oz jar spaghetti sauce |
4 cups water |
2 tsp. salt |
1 1/2 tsp pepper |
1/2 tsp thyme |
1 tsp hot sauce (to taste - we use more cause we like it hot) |
Directions:
1. In a large pot brown ground beef, then drain. 2. Add potatoes, onion, and tomato sauce. 3. Stir in water, salt, pepper, thyme and hot sauce. 4. Bring to a boil. 5. Reduce heat to low and simmer for 1 hour or until potatoes are tender and soup has thickened. |
