This is a recipe from a family friend, absolutely delicious! Ingredients:
1 lb italian sausage |
1/2 onion, diced |
2 stalks celery, chopped |
4 large potatoes, peeled and cubed |
6 cups chicken stock |
1 quart heavy cream |
Directions:
1. Brown italian sausage and drain, set aside to cool. 2. Sautee the onions and celery in some butter until the onions start to become clear and soft. 3. Combine the sausage, onions/celery, and potatoes in a large pot, cook for 10 minutes until potatoes begin to brown. 4. Pour in all of the chicken stock, bring to a boil, and cook until the potatoes are fork tender. 5. Remove from heat, and SLOWLY add the cream, stirring constantly to prevent scorching. Return to medium heat until soup is warmed. |
