Spicy Potato and Southern Greens Chowder |

Ingredients:
2 quart(s) chicken broth |
2 cloves garlic, chopped |
3 large potatoes, peeled and cubed (about 2 cups) |
1 medium onion, chopped |
2 tablespoon(s) olive oil |
1 bag(s) southern greens blend |
1/2 pound(s) trader joes spicy chicken sausage, thin sliced |
Directions:
1. Using 5 or 6 quart stockpot, saut sausage and onion in hot oil until sausage is lightly browned. Add garlic and saut for two minutes. Add chicken broth and potatoes and cover pan. Simmer over low heat for 30-45 minutes. Add 3 handfuls of the Southern Greens Blend and simmer for 15 minutes. (If broth has cooked down more than you would like, add about 1/2 cup water.) |
