This quick and easy Mexican flavored soup is very refreshing and spicy. The amount of spiciness will depend on how hot the chilies are that you use. Although it is not common to have kale in this type of soup, this healthier version tastes great and adds an additional boost of nutrition. Ingredients:
1 medium onion, chopped |
6 garlic cloves, chopped |
4 cups chicken or vegetable broth |
2 tbs fresh lime juice |
3 cups kale, rinsed and chopped fine (remove stems) |
2 chicken breast, cut in cubes |
2 cups hominy, canned and drained |
1 diced tomatoes, canned |
1 peppers, chili, green, canned |
3 tbs chopped fresh cilantro |
1 salt and pepper to taste |
Directions:
1. Rinse kale and remove stems. Chop fine. 2. Heat 1 TBS broth in medium sized soup pot. 3. Healthy Sauté onion in broth over medium heat for 5 minutes stirring frequently, until translucent. 4. Add garlic and continue to sauté for another minute. 5. Add remaining ingredients except cilantro. Bring to a boil on high heat. 6. Once it comes to a boil, reduce heat to medium low and simmer for 15 minutes, uncovered. 7. Add cilantro, salt and pepper. |
