A super-healthy vegan main dish; can also be used as a side dish. Ingredients:
4 (15 ounce) cans pinto beans |
2 cups cooked brown rice |
4 teaspoons olive oil |
1 onion |
3 garlic cloves |
1/2 teaspoon cumin |
1/3 cup salsa, hot |
Directions:
1. In medium pot, saute onion and garlic in oil. Add remaining ingredients and cook until heated through. |
