Ingredients:
1 tablespoon whole cloves |
2 teaspoons whole allspice |
2 (3-inch) sticks cinnamon, broken |
1 large lemon, sliced |
4 cups sugar |
2 cups white vinegar |
2 large pineapples, peeled, cored, and cut into sticks |
Directions:
1. Combine first 4 ingredients; tie in a cheesecloth bag. Combine spice bag, sugar, and vinegar in a stainless steel stockpot. Bring to a boil. Add pineapple sticks. Reduce heat; simmer, stirring occasionally, 25 minutes or until pineapple is clear. Remove spice bag; discard. 2. Pack pineapple into hot sterilized jars, and cover with hot syrup, leaving 1/2-inch headspace. Remove air bubbles. Cover with metal lids, and screw bands tight. Process in boiling water bath 10 minutes. |
