Spicy Pineapple Fried Rice |

Most pineapple fried rice dishes are too sweet for my taste, but not this one. Ingredients:
1 cup basmati rice |
1 (20 ounce) can pineapple tidbits, drained |
4 scallions, chopped |
1 large red chile, finely chopped |
3 sprigs cilantro, coarsley chopped |
3 tablespoons oil, divided |
2 cups fresh shrimp, cleaned and deveined |
3 garlic cloves, minced |
2 tablespoons nuoc nam |
2 tablespoons soy sauce |
1 teaspoon sugar |
cilantro, for garnish |
Directions:
1. Prepare the rice according to the directions on the package and set aside. 2. In a medium bowl, mix the pineapple, scallions, chile, and cilantro, and set aside. 3. Meanwhile, heat 1 tablespoon oil in skillet, and sauté shrimp until done. Remove the shrimp from the skillet. In the same skillet, over medium heat, add the remaining oil. Sauté the garlic until golden brown. Add the cooked rice and stir. Add the nuoc nam, soy sauce, and sugar. Stir and heat thoroughly. 4. Fold in the pineapple mixture and the shrimp. Heat through. Garnish with cilantro and serve. |
