This recipe is made with pre-cooked medium shrimp. If you want to use raw shrimp, just add them in the first step along with the crushed red pepper flakes (the recipe cooks real fast). Serve over cooked rice. Adapted from a recipe in Mens Health magazine, June 2009. Ingredients:
2 teaspoons peanut oil |
1/4 teaspoon crushed red pepper flakes |
1 cup red bell peppers or 1 cup green bell pepper, cut into thin strips |
1/4 medium onion, large dice |
1 tablespoon orange juice |
2 tablespoons canned jalapeno slices (jarred) |
1 tablespoon hoisin sauce |
10 ounces medium precooked shrimp, defrosted (about 30) |
Directions:
1. Heat the oil in a skillet over medium high heat; add crushed pepper flakes (and shrimp if using uncooked). 2. Add remaining ingredients, except shrimp if using precooked, and cook 2 to 3 minutes, stirring frequently. 3. Add shrimp and cook 2 or 3 minutes more (cook 2 or 3 minutes, even if you have already added the shrimp), stirring frequently; serve. |
