From Veggie Revolution by Sally Kneidel and Sara Kate Kneidel This sauce perks up the dullest vegetable side dish: it adds protein and heartiness in addition to delicious peanut flavor. It can also be added to a stir-fry, saute, or sandwich, or use as a dip for chips or spring rolls Ingredients:
1 cup milk, 2 |
1/4 cup peanut butter |
3 tablespoons plain yogurt |
3/4 teaspoon oregano |
3/4 teaspoon red pepper flakes |
Directions:
1. In a small saucepan, heat milk on medium-low heat. 2. Not allowing the mixture to boil, stir in peanut butter and mix vigorously until the mixture is uniform. 3. Stir in yogurt, oregano, and red pepper flakes and continue stirring until the sauce is smooth. 4. Remove from heat. 5. Makes 1 1/2 cups |
