This is a spicy peanut sauce that my family really enjoys. We like to add chicken, but it's great without it. Being a nursing mother as well has feeding it to our toddler I add about 1/2 the red curry paste. This is a wonderful quick meal. We like to serve this over a bed of rice. Ingredients:
1 (14 ounce) can coconut milk |
1 tablespoon red curry paste (or to taste) |
1/2 cup peanut butter |
2 tablespoons sugar |
2 tablespoons rice vinegar |
1 tablespoon fish sauce |

Directions:
1. Stir coconut milk until smooth (or shake the can before opening). Heat half in a sauce pan, add curry paste. Sir until fully blended and turns pail amber. 2. Blend peanut butter, sugar, rice vinegar, fish sauce and the remaining coconut milk. Cook 8 to 10 minutes stirring frequently until sauce thickens. |
