This is a wonderful soup that is great for a cold night! Ingredients:
1 lb. of peeled and cubed parsnips |
1 medium chopped onion |
1 clove of finely chopped garlic |
2 tsp. of curry powder |
1 cube of chicken bouillon |
3 1/4 c. of boiling water |
1/2 c. of heavy cream |
salt and pepper to taste |
1 pinch pf red pepper flakes or paprika for garnish |
2 tbsp. of butter |
Directions:
1. First you want add butter to a pan over medium flame. 2. Saute the onions until yellow, approx. 5 min. 3. Now you can add the parsnips, garlic, and curry powder. 4. In a small bowl, mix the bouillon and some boiling water then add the to the pan. 5. Stir continuously so nothing sticks to the bottom of the pan. 6. Let this cook over low flame for approx. 15 min. 7. Take this off the flame. 8. Pour this into the blender and blend until creamy. 9. Now you can add in the cream and pour into bowls! Enjoy! |
