Ingredients:
4 cups all-purpose flour |
1/2 cup grated parmesan cheese |
2 tablespoons baking powder |
2 teaspoons granulated sugar |
1 teaspoon baking soda |
6 tablespoons cold butter, cut into pats |
6 tablespoons chilled solid vegetable shortening, cut into pats |
1 cup buttermilk |
2 tablespoons buttermilk |
1/2 cup hot sauce |
Directions:
1. Preheat the oven to 450°F Place flour, cheese, baking powder, sugar and baking soda in a blender or food processor. Cover and process for 30 seconds. Add the butter and shortening and process, pulsing on and off, until fine crumbs form. Transfer to a large bowl. 2. Add 1 cup of buttermilk and the hot sauce all at once. Stir together just until the mixture starts to form a ball. (Dough will be dry. Do not over mix.) 3. Turn the dough out onto a lightly floured board. With the palms of your hands, gently knead the dough 8 times. Using a floured rolling pin or your hands, roll or pat the dough to 3/4-inch thickness. Using a 2 1/2 inch round biscuit cutter, cut out 16 biscuits, re-rolling dough as necessary. 4. Place the biscuits 2 inches apart on a large foil-lined baking sheet. Brush the tops with the remaining 2 tablespoons of buttermilk; sprinkle with sesame seeds if desired. Bake for 12 to 15 minutes or until golden brown. |
