Spicy Oven-Fried Chicken Breasts |

A simple meal to put together. Served with any flavor of Lipton Packet Rice, mixed vegetables and side salad makes a complete meal. Ingredients:
1/4 cup dry breadcrumbs |
1 tablespoon grated parmesan cheese |
1 teaspoon paprika |
1 teaspoon dried thyme |
1/2 teaspoon garlic salt |
1/4 teaspoon ground red pepper |
1/3 cup low-fat buttermilk |
4 boneless skinless chicken breast halves |
cooking spray |
1 tablespoon margarine or 1 tablespoon butter, melted |
Directions:
1. Preheat oven to 400 degrees. 2. Combine first 6 ingredients in a shallow dish. 3. Place buttermilk in a shallow bowl. 4. Dip chicken in buttermilk; dredge in bread crumb mixture. 5. Place chicken breast sides up, in a jelly-roll pan coated with nonstick cooking spray. 6. Drizzle margarine over chicken. 7. Bake at 400 for 40 minutes or until done. |
