This is an excellent, quick-fix dinner to cook during the busy work week. If you usually like extra sauce, this recipe makes plenty without changing any of the quantities. Ingredients:
1/4 cup vegetable oil |
2 lbs round steaks, cut into thin strips on the diagonal |
1/2 cup orange rind, cut into slivers |
2 cloves minced garlic |
1 teaspoon ginger |
1/4 cup cornstarch |
2 cups beef broth |
1/2 cup soy sauce |
1/2 cup sherry wine |
1/2 cup orange marmalade |
1 teaspoon crushed red pepper flakes |
Directions:
1. In a wok or skillet heat oil over medium-high heat. 2. Add beef strips 1/3 at a time and stir-fry for 3 minutes or until browned. 3. Remove to a plate lined with paper towels when done. 4. Add orange peel, garlic and ginger to wok. 5. Add the beef back in and stir-fry 1 minute. 6. In medium bowl combine cornstarch, broth, soy sauce, sherry, marmalade and red pepper. 7. Pour into beef, stirring constantly. 8. Bring to a boil over medium heat and cook for 1 minute. 9. Serve hot over rice. |
