Spicy Minced Meat With Tofu And Mushrooms |

This is a fave home-dish which I cook at least once a week. Goes really well with rice because it’s spicy and flavourful. It's delicious, healthy and easy to cook. Try it! ;p Ingredients:
50g minced pork/chicken/beef |
150g block tofu, cubed |
100g fresh button mushrooms (both white or brown is fine), diced to small cubes |
1 tbsp olive oil |
1 tbsp chopped garlic |
1/2 tbsp salted soya beans (aka dou jiang, ‘tao cheow‘, 豆酱) |
1 tsp dried fermented black beans |
2 red chilli, deseeded and finely chopped |
cornstarch solution (1 tbsp water with 1/2 tbsp cornstarch) |
chopped spring onions and fried shallots for garnishing |
marinade |
1/2 tsp light soy sauce |
1/4 tsp sugar |
1/2 tsp corn starch |
1/2 tsp sesame oil |
ground white pepper |
seasoning (mixed well) |
1/2 cup water |
1/2 tsp dark soy sauce |
1/4 tsp sugar |
1/2 tbsp sesame oil |
Directions:
1. In a bowl, mix minced meat with marinade and leave for 10 minutes. 2. Heat oil in wok and add the garlic, salted soya beans, fermented black beans and chill. Stir fry till fragrant. Next, add the marinated meat and stir fry till cook, breaking it up to small bits using the frying turner. 3. Add mushrooms and seasoning. Mix evenly. Bring to a boil. 4. Gently add beancurd and cook over low heat for 3-5 minutes. Take care not the break the tofu cubes. 5. Thicken with cornstarch solution. 6. Garnish with spring onions and fried shallots. Serve with warm, fluffy white rice. |
