SPICY MEXICAN BEAN BURGER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hayes Estate in Mesquite, Texas in 1989. Ingredients:
16 ounce can red kidney beans drained and rinsed |
1/2 small white onion coarsely chopped |
1/2 green bell pepper coarsely chopped |
1 carrot steamed and mashed |
1/8 cup chunky salsa |
1 cup bread crumbs |
1/2 cup flour |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
1/8 teaspoon chili powder |
Directions:
1. Mix all ingredients together then form into balls and smash into patties. 2. Bake at 450 for 20 minutes then serve on buns with lettuce, tomato and salsa. |
