Spicy Mediterranean Sausage Soup |

From my kitchen. A nice zesty soup on a cold day. I love this dish with a gooey grilled cheese. YUM!!! Ingredients:
5 cups low sodium chicken stock |
1lb of hot (mild if you don't like hot) italian sausage (out of casing) |
1/2 large red bell pepper, chopped |
1/4 lb of sliced mushrooms |
8 asparagus spears, chopped |
1 tsp of minced garlic |
1 tbsp of tomato paste |
1 tbsp of basil pesto |
1 tbsp of parmesan cheese |
Directions:
1. Cook sausage meat in a frying pan until cooked through. 2. Put all the ingredients in a pot (including cooked sausage) and bring to a boil on high. 3. Lower temperature to med/low. 4. Let simmer for 20 minutes until asparagus is tender. 5. Serve in bowls with Parmesan cheese sprinkled on top. |
