Spicy Meatballs and Couscous |

This title is a bit misleading-I don't find the dish to be very spicy, but some people do, hence the warning label. I made it up one night when I had fifteen minutes to get dinner on the table-I juggled my pots and had it ready in twelve! Don't worry if it sounds like it needs more herbs or spices, it is tasty as is. The peanuts are a South African thing to add-try it at least once. Ingredients:
16 frozen meatballs (italian style are fine) |
1 (10 ounce) can diced tomatoes with green chilies |
1 (8 ounce) package couscous |
chopped peanuts (optional) |
Directions:
1. Place meatballs in a pot, cover with the tomatoes and chilis, and bring to a boil, stirring occasionally. 2. When boiling, reduce heat, cover, and simmer 8-10 minutes. 3. Prepare couscous according to package instructions. 4. Spoon meatballs and sauce over couscous and serve, sprinkling with peanuts if desired. |
