Don't get me wrong I love a creamy crab soup but in Maryland we eat a different crab soup. The recipe for Maryland Style Crab Soup is a spicy vegetable soup. Ingredients:
4 cups water |
3 chicken parts (neck or wing) |
1/2 cup onion ( chopped) |
2 stalks celery (chopped) |
2 tablespoon hot sauce (i use texas pete) |
2 tablespoon olive oil |
3/4 tablespoon old bay seasoning (add more or less to taste) |
1/4 teaspoon lemon pepper |
1 tablespoon worcestershire sauce |
2 cups red potatoes (cubed) |
1/2 cup frozen lima beans |
1 cup frozen green beans or frozen peas, thawed |
8 ounces frozen corn, thawed |
28 ounces canned tomatoes with juices |
1 bay leaf |
1 pound crab meat, fresh or pasteurized, regular or claw |
Directions:
1. Place water and chicken in a 6-quart soup pot. Cover and simmer over low heat for at least one hour (as a short cut you could use 1 quart chicken broth and skip this step). Remove chicken parts, add vegetables and seasonings and simmer, covered, over medium-low heat from about 45 minutes, or until vegetables are almost done. Add crab meat, cover and simmer for 15 more minutes, or until hot. (For a milder soup, decrease amount of Old Bay and hot sauce). |
